I was very inspired to make crab puffs after having my friend Elaine’s wonderful homemade crab puffs.
1/2 pound of fresh Crab Meat
2 Boxes of Philadephia Cream Cheese, melt in microwave for 45 seconds or until soft
1 tablespoon of Lemon Juice
4 Salted Egg Yolks, chopped to simulate crab roe
Mediterranean Sea Salt
White Ground Pepper
1 bunch of Green Onions, chopped
1 stack of Thick Wonton Skins, Round or Square
Cornstarch mixture to seal crab puffs (1 tablespoon of cornstarch to 3 tablespoons of water, stir and mix well)
Mix ingredients A well. Put a small portion on each wonton skin. Wrap any way you like. You can fold it into half or pinch all four sides together or make an ingot out of it.
Deep fry the wontons at 350 degrees Fahrenheit for about 1 1/2 to 2 minutes.
