Malibu coconut rum cake

My mother-in-law was very good at making this cake. Unfortunately, I didn’t get her recipe before she passed away. I did a lot of online research and modified some of the recipes I found to come up with my own.

Ingredients:

1 Betty Crocker Yellow Cake Mix

1/2 Cup of Malibu Coconut Rum

1/2 Cup of Milk

1/2 Cup of Peanut or Vegetable Oil or 1 stick of butter (1/2 cup)

3 Eggs

Method:

Add the above ingredients and cake mix to the food processor. Mix on low for 30 seconds, then mix on medium for 2 minutes. Spray non-stick bundt cake pan with Baking Pam. Sift flour over the bundt cake pan. Pour out excess flour. Next, pour in cake batter. Bake at 350 degrees Fahrenheit for 45 minutes.

    • Thank you Tresors De Luxe, my mother in law taught me how to make this cake. Many people made this cake in different versions. Some people add vanilla pudding mix to it for a softer texture but I like it less sweet so I did half milk half rum. You can also add all rum (1 cup) and no milk if you like it more “rumy”! Lol!
